Chicken Nuggets

Kids love chicken nuggets - even Mr Fun eats them (probably because the chicken is coated in carbohydrate ;)). So this week I decided to have a go at making chicken nuggets myself - without all the salt/preservatives and with a little hidden vegie goodness.



Makes 32 large nuggets

1 kg chicken mince
4 carrots (grated)
4 cloves garlic, finely chopped
some breadcrumbs to mix into chicken
some paprika
about 1 cup cornflake crumbs (I just crushed up the cereal, but you can buy them already crushed)

Mix the chicken, carrots, garlic, breadcrumbs & paprika. Take small blobs of the mixture & roll them in the cornflake crumbs. Lay on a baking tray & bake at 180 (160 fan-forced). Cook until golden, turning once (mine took about 35min?). Serve with your favourite sauce - we like sweet chilli & mayo.
